Comiendo con los ojos: Pastelería Tolosana

Buenos días! Hoy nos vamos a Huesca para visitar el obrador de Tolosana, la pastelería que creó la deliciosa Trenza de Almudévar! Durante años siempre que mi familia se reúne hay una trenza para acompañar el té o el café, así que fue un placer descubrir cómo se hacen de la mano de Luis Tolosana.  Ya sabéis que me encanta el dulce, y si además me ponen una redecilla goyesca en la cabeza... no me puedo resistir!

Good morning! Today we are in Huesca to visit Tolosana workshop, where the delicious Almudévar braid was invented! For many years my family has eaten braids whenever we get together and there's tea or coffee around, so discovering how it's made was a pleasure, and we had Luis Tolosana showing us around. You know how much I love sweets, and wearing funny outfits!




Empezamos la visita aprendiendo cómo hacen el pan, incluso están empezando a trabajar con harina molida en un molino tradicional!

We start the visit learning how they make bread!





Después pasamos al fantástico universo de las trenzas!

And then we enter the wonderful braids world!


Todo comienza con la masa para el hojaldre,

It all starts with the pastry dough,


se dobla envolviendo una capa de mantequilla, se estira y se vuelve a doblar,

it folds with a butter layer inside, it stretches and folds again,


así hasta conseguir 17 capas de masa intercaladas con 16 de mantequilla, y se deja reposar.

until you get 17 layers of dough and 16 alternate layers of butter, and let it settle.


Luis Tolosana nos enseño todos los pasos para transformar el hojaldre en trenza.

Luis Tolosana taught us every step to make a braid out of the puff pastry.


Primero se extiende una fina capa de yema sobre la plancha de hojaldre,

First you spread a thin layer of yolk on the puff pastry piece,


después se añaden frutos secos y se enrolla,

then you add dried fruits and roll it,


se corta por la mitad y las 2 tiras se van cruzando, con la parte del corte hacia arriba,

you cut it in two and cross both pieces several times, leaving the cut side up,


y listo para hornear!

and ready to bake!


Además de la trenza clásica nos dejaron experimentar un poco y hacer nuestra propia versión: frambuesa, almendra y chocolate... libertad creativa!

Apart from the classic one, we experimented a little and made our own version: framboise, almond and chocolate... creative freedom!


A la mañana siguiente nos las llevaron recién horneadas a una de las pastelerías Tolosana de Zaragoza, listas para desayunar!

The morning after we got them delivered at one of their shops, freshly baked and ready for breakfast!
