Comiendo con los ojos: Aponiente

Buenos días! Aprovechando que estamos en el sur este año celebramos el cumple de Carlos en Aponiente, el precioso restaurante de Ángel León, situado en un molino de mareas en el Puerto de Santa María. El Chef del Mar fue encantador al recibirnos en su cocina, y lo mismo hay que decir de su tripulación, que nos mimó muchísimo durante toda la experiencia.

Good morning! Since we are in the south of Spain this year we celebrated Carlos birthday at Aponiente, the beautiful restaurant by Ángel León, located in a tide mill at El Puerto de Santa María. The Sea Chef kindly received us in his kitchen, and his crew really pampered us during the entire experience.

Comenzamos el Primer Lance en la terraza acristalada de la entrada, con unos moluscos adobados con aire de mar.

We start with the "first cast of the net" at the glass cube by the entrance, with some marinated molluscs and sea air.


Seguimos con una copita de fino, sorprendentes chicharrones de morena y un riquísimo temaki de albacora.

Next comes a fino glass, amazing moray eel rinds and a yummy albacora temaki.


Ahora llega la tortillita de camarones mas fina del mundo, que la hacen con camarones frescos que sacan de un acuario allí mismo. Qué os parece?

Now comes the fanciest crisp shrimp fritters in the world. A local dish turned into a delicacy. They get the fresh camarones (mini shrimps) from an aquarium in the same room!


Aquí tenemos al matrimonio de sardina y boquerón, un dumpling de calabaza relleno de atún encebollado y un bocadito de sardinas.

Here we have 3 different bites; sardine, anchovy and pumpkin dumpling stuffed with tuna


Entramos al molino y nos quedamos en un balcón para observar la marea mientras nos tomamos una cucharita de kokotxas en salse verde, buenísimas!

We enter de tide mill and stand by a balcony to watch the tide while we enjoy kokotxas in green sauce!


Tras pasar por la cocina abierta y que Ángel León nos dé la bienvenida y un pequeño recuerdo, llegamos al comedor. En la mesa están amarrados los dos menús para elegir. Nos quedamos con el Mar de Fondo...

After passing by the open kitchen where the chef welcomed us and gave us a little souvenir, we reach  the dinning room. The menus are tied up to our table, ready for us to pick one. We go for the Groundswell...


Comenzamos el segundo lance con un original carrito de embutidos, lo que parece chicha es en realidad pescado! 

The "second cast of the net" starts with a unique cold meat cart, but it's not meat, they call it Sea Sausages!


Yo he de decir que hasta el momento todas la versiones alternativas de embutidos hechos sin carne que había probado no me han gustado nada. Pero esto es otra historia! Una historia que además nos explica de maravilla la bióloga marina del equipo. Nos hacen una selección de 3, dos de ellos hechos con liza. La butifarra me recuerda a la morcilla blanca de la Tía Bea.

I must say I have never liked any non-meat sausage I've tried before, but this is quite different! We had a sea biologist explaining us the story behind, and then tried 3 different ones, really nice.


Después llegan los ostiones, primos hermanos de las ostras.

After this we had some kind of oysters called ostiones.


Caballa con helado de pepino y jalapeño. Me encantó este plato,  la armonía de colores y brillos es una pasada, y la mezcla de sabores fantástica. A mí el jalapeño no me va mucho, pero le daba un punto genial.

And mackerel with cucumber and jalapeño ice cream. I loved this one, the colours and shimmering  harmony is beautiful, and the flavours balance is wonderful. I'm not really into jalapeños, but here it gave a perfect touch.


Gazpacho de maíz y calamar, muy muy bueno, si alguien me pasa la receta seguro que lo haría muchísimo!

Corn and squid gazpacho, really really delicious, if I can get the recipe I'll be cooking this really often!


La alternativa era este gazpacho de zanahorias encominadas con berberechos, también muy bueno, pero me quedo con el de maíz.

As a second choice we had this carrot and cumin gazpacho with cockles, also nice, but corn was my favourite.


Royal de erizos y caviar. Siempre me han gustado los erizos y lo sabrosos que son, y este plato es sublime. Debajo de la capa verde había una crema naranja suave y deliciosa, y el caviar hace el plato redondo!

Sea urchin and caviar royal. I've always liked sea urchins, how intense they are, and this was out of this world. Under the green layer there was a soft and delicious orange cream, and caviar just made it more exciting!


Mientras nos comíamos lo anterior, nos iban preparando un steak tartar de lo más original,  hecho con calamar macerado en remolacha, y con una textura bastante conseguida. No os parece solomillo?

While we were eating, they made a different steak tartare, with squid marinated in beetroot, the texture was very interesting. Doesn't it look like beef? 


Lo siguiente es esta sopa yódica, que llega a la mesa en este misterioso plato rodeada de humo frío. Era una sopa fría de marisco muy sabrosa.

Next we had this iodine soup, which came in this mysterious rock surrounded by cold smoke. It was a  seafood cold soup really tasty.


La menestra de verduras con un aire de mar quizás fue el plato más flojo.

The veg medley with sea air was a little dull.


Y llegamos a otro de mis favorito; la quisquilla ibérica. Unas quisquillas con huevas azules y flores, nadando en una sopita ibérica. Sabía como las cucharadas de bechamel que le robaba a mi madre cuando hacía croquetas de ibérico... Si me llenan el cuenco hasta arriba me lo hubiese tomado, claro que luego no me habrían cabido los postres!

And now another favourite: the Iberian quisquilla (shrimp). Some small shrimps with blue roe and flowers, swimming in an Iberian ham soup. It tasted like those bechamel spoons I steal from my mom's kitchen whenever she's making Iberian croquettes... I could have eaten a whole bowl, but we need to leave room for dessert!


El siguiente plato es una obra de artesanía y de lo más entrañable de la experiencia: Papas con choco y coñeta a la prensa. Os presento a la coñeta; un cangrejo típico de la zona.

The next one is a piece of craftwork, and a charming story: potatoes with cuttlefish and pressed coñeta; a local green crab.


La prensa viene de Can Fabes, el restaurante de Santi Santamaría, donde trabajó parte de la tripulación. En origen está pensada para hacer pato prensado, pero aquí la utilizan para sacarle los sabrosos jugos a la coñeta

The press comes from Can Fabes, Santi Santamaría restaurant, where part of the crew worked. It's originally designed to make pressed duck, but they use it to get the tasty juice from the crab.


Con los jugos y armagnac hacen una salsa que añaden a un ravioli de choco (sepia para los de Madrid) y una lámina de papa (patata en mi tierra). Las papas con choco es un plato típico de aquí, en mi cabeza es un marmitako gaditano. 

With that juice and armagnac they make a sauce and put it on a cuttlefish ravioli and a potato slice. Potatoes with cuttlefish is a local dish.


La carbonara de algas estaba tremenda! Y los gnoquis de debajo también!

The seaweeds carbonara was to die for! And the gnoquis also!



El puntillón (chopito para los del norte) con salicornias a la crema estaba bueno, aunque tanta crema se comía el sabor del bichito.

This baby squid with salicornia and cream was nice, but the cream stole all the attention.


Terminamos el segundo lance con pez espada a la grenoblesa.

We finish with swordfish à la grenobloise.


Y como alternativa el mismo plato con anguila.

And as a second choice we had the same with eel instead of swordfish.


Mención especial para el panadero y sus panes, no sé ni cuantos probamos, pero estaban todos tan buenos que no hacía falta ni mojar!

The baker and bread is worth mentioning, I don't even know how many we tried, but they were all amazing!


Pasamos a los dulces con algo refrescante para limpiar el paladar; la Manzana Fresca. Perfecto para hacer un huequito para lo siguiente!

And now we change to the sweet side with something fresh to clean our palate: Fresh apple, perfect to keep us going!


Seguimos con esta versión de las Fresas con Nata, en formato burrata. Mucha nata y pocas fresas para  mi gusto. Aunque a mí la nata no me motiva demasiado. Seguro que a mi hermana le hubiese encantado.

Then we had this version of strawberries and whipped cream, in a burrata style. Too much cream and not so many strawberries if you ask me. Whipped cream is not my thing.


Llegamos al último postre, un coulant de Medina Sidonia. Qué cosa más buena! Blandito y calentito, con ese sabor a alhajú... es como comerse un trocito de navidad, en pleno verano! Por algo así hasta perdono que el chocolate no esté en el menú. Aunque lo cierto es que nos trajeron una tarta de chocolate para el cumpleañero, casi explotamos...

And the last dessert, this coulant from Medina Sidonia. There's no words that can describe it! Soft and warm with that alfajor flavour... it's like eating a piece of Christmas, but in summer! This almost made me forgot there was no chocolate on the menu. Although they brought us a chocolate cake for the birthday boy...


Para superar la modorra un cafelito, y todas las formas posibles de endulzarlo!

And to keep us up after so much food we had coffee, served with as many sweeteners as you can imagine!


Y rematamos con unas frivolidades para acompañar una copita de moscatel de la zona, qué me decís del ancla!?

All topped with a moscatel glass and some mignardises brought on an anchor, how cool is that!?
