Comiendo con los ojos: El ronqueo del atún

Buenos días! Empiezo el año con un menú muy especial que tenía pendiente compartir con vosotros. Nos hemos mudado a Estados Unidos, pero cuando todavía estábamos en España, Carlos preparó esta fantástica degustación de atún rojo maridado con champagne. Fue toda una experiencia que tuvo tres etapas en un recorrido por tres restaurantes, comenzando con el ronqueo de un atún de 300 kilos. Ya sabéis que adoramos el atún y nos pasamos el verano en la costa gaditana disfrutando de este manjar, tenéis hambre???

Good morning! I want to start the year with a very special menu that I had wanted to share for  a long time. We have moved to the US, but when we were in Spain Carlos created this amazing red tuna tasting, paired with champagne. It was an amazing experience divided in 3 stages at three different restaurants, starting with the "ronqueo" (cutting up) of a 300kgs tuna. You know how much we love this fish as we spent last Summer enjoying it around Cadiz, are you hungry???




Durante el primer acto de este espectáculo despiezaron al rey del mar, explicando cada una de sus partes; mormo, parpatana, morrillo, ventresca, galete, tarantelo...

During the first act they cutted up the sea king, explaining each part: cheek, belly, upper back, gill...


Mientras tanto probamos:
Un ceviche de atún en suculenta endivia morada, el atún en su versión más fresca, delicioso.

Meanwhile we start tasting:
Tuna ceviche in purple endive, tuna as fresh as it gets, delicious.


Nigiri de ventresca soasada con aceite de trufa blanca y tobiko, esa ventresca que su funde como la mantequilla con ese toque tostado... ya estoy salivando!

Roasted belly nigiri with white truffle oil and tobiko, that melting belly soft as butter with the roasted touch... I'm already salivating!


Termina el ronqueo y pasamos al segundo acto para probar un maki de atún marinado en sojelim (soja, jengibre y lima) con aguacate. Esto fue lo mas simple del menú, pero estaba bueno.

The cutting ends and we come to the second act to try a maki with tuna marinated in soy, ginger and lime, and avocado. This was too simple, but it was good.


Después un escabeche de atún que estaba para mojar pan, pero si empiezo con el pan no llego a los postres...

Next comes a marinated tuna (in evoo, onions and bay) calling me to dip some bread, but if I start eating bread I won't be able to have dessert...


Y a continuación una ensaladilla de atún confitado en aove con una espuma de mahonesa de zanahoria. La que hace en casa es la clásica, le tengo que decir que esta me gusta más!

And potato salad with tuna contif and carrot mayonnaisse foam. The potato salad he makes at home is a classic one, I have to remind him I like this better!


Llegamos al tercer acto; carpaccio de atún rojo con parmesano en texturas, almíbar de higos y rúcula. La mezcla de texturas espectacular, el cremoso de parmesano con el crujiente de la hoja de ostra y el sabor del atún... 

We start the third act: tuna carpaccio with parmesan cheese in different textures, figs syrup and arugula. The textures combination was spectacular, creamy parmesan, crunchy oyster leaf, juicy tuna...


El siguiente plato se llama sashimi de ijada con infusión de citronela y helado de té de roca, pero se podría haber llamado "todo lo que le gusta a Sarita en un plato" y hubiese sido lo mismo. Yo descubrí el té de roca hace años en Zaragoza, me lo dieron a probar en casa de unos amigos como algo muy especial porque al parecer es una especie protegida, me encantó pero no volví a dar con él hasta que un día con Carlos encontramos este helado, es un sabor único! La citronela me gusta tanto que cuando nos fuimos a vivir juntos estuvo mareando a algún proveedor hasta que consiguió una maceta para casa. Me encantaba hacer té con ella pero, como las plantas no son mi fuerte, no sobrevivió. Aunque yo creo que el clima de Madrid también tuvo algo de culpa...

The next one is belly sashimi with infused lemongrass and t'e de roca ice cream, but you could also call it "everything Sara likes on a plate". I discovered "te de roca" some years ago in Zaragoza, it's a local endangered plant from which you can make an infusion, and some time ago we tried this ice cream, the taste is so unique! Lemongrass is also one of my favourites, Carlos even used some contacts and got me a plant when we first moved in together, but it didn't survived in Madrid climate. Or maybe it was just me and my plants issue.


Volvemos al atún, que me voy por las ramas. Tataki de melva con toques de encurtidos. Los encurtidos por más que lo intento no me agradan mucho, pero la cremita de debajo estaba muy rica, y  el punto de la melva perfecto.

Let's go back to tuna! Frigate tuna tataki with a hint of pickels. I don't really enjoy pickels no matter how hard I try, but the cream under was really nice, and the fish wash done to perfection.


Nos despedimos del atún con un estofado de morrillo con demi glace de tomate al tomillo y puerro confitado. Aquí si que mojo un poquito de pan. El morrillo es espectacular, muy jugoso y sabrosísimo.

We bid farewell to our friend with a cheek stew with thyme tomato demiglace and leek confit. Time to dip some bread. The cheek was fantastic, really juicy and tasty.


Y pasamos al lado dulce con dos de sus clásicos; la crème brûlée con algodón de violeta. Os podría decir muchas cosas, pero esto es de esas cosas que hay que probar... lo siento!

Let's change to the sweet side with two of his classics: cr'eme brulee' with violet candy floss. I could tell you a lot about it, but some things you just need to taste... sorry!


Y la torrija infusionada en vainilla, con salsa de cereza y helado de amarena. Lo mejor de esta torrija es que no va frita, va caramelizada y tiene ese punto crujiente... o quizás lo mejor era el sabor intenso de la cereza. Es increíble que con las que me he comido todavía no sepa explicarla bien.

And a "torrija" (traditional Spanish dessert) infused in vanilla cream with cherry sauce and amarena ice cream. The bread is caramelized and has that crunchy note... and the intense cherry was sooooo good. I don't know how many of these I have eaten, but I never get tired of it!
