Comiendo con los ojos: Alinea

Cuando hace un año Carlos y yo vimos el programa Chef's Table que hicieron sobre Grant Achatz decidimos que teníamos que ir a conocer Alinea, así que en cuanto nos mudamos a Estados Unidos empezamos a preparar esta escapada. Chicago nos ha conquistado del todo, y la experiencia en este restaurante fue alucinante. Tenéis hambre?

When Carlos and I watched Chef's Table episode about Grant Achatz a year ago we decided we had to go to Alinea. So, the moment we landed in United States we started planning this getaway. We loved Chicago, and the experience at the restaurant was amazing. Are you hungry?


Nuestra mesa al llegar estaba decorada por este enorme frutero lleno de naranjas y mandarinas, con un olor que me transportó por unos minutos a España, como si estuviese entrando en la cocina del pueblo un día de verano.

Our table was decorated with this huge bowl full of oranges and clementines, which fragrance took me back to Spain for a few minutes, to one of those Summer days in my family's kitchen.


Nieve mojada: empezamos con un refrescante granizado de pera con huevas y shiso, con una mezcla de sabor muy original y texturas de lo mas divertidas.
Wet Snow: we start with a refreshin pear granita with roe and shiso, a cool mix with interesting textures.

Tallo: lo acompaña esta hoja de lechuga con aguacate y jalapeño, fresco y crujiente!
Spear: it comes with this romaine leave with avocado and jalapeño, fresh and crispy!


A continuación la mesa se convierte en espectáculo gracias al hielo seco, que hace que una espesa niebla comience a salir del frutero, cubriendo toda la mesa y dejándose caer lentamente hasta el suelo, como comer en las nubes!

Then the table turns into a theatrical show thanks to dry ice, that creates a thick fog coming from the fruit bowl, covering the whole table and falling slowly until the floor, it felt like eating on a cloud!


Mientras la niebla y el olor a naranja nos envuelven, seguimos con los platos:
Ranina Ranina: Esta variedad de cangrejo la preparan con coco y curry, en una mezcla de texturas cremosas con toques indios, no era muy bonito, pero estaba buenísimo!

While the fog and the orange fragrance surrounded us, more food came:
Ranina Ranina: they prepare this kind of crab with coconut and curry, mixing creamy textures with Indian touches, not the prettiest dish, but it was delicious!


Resplandor: Esta esfera de naranja con un toque picante es el bocado ideal tras el curry de cangrejo, y  la presentación cósmica es lo más!

Glow: This spiced orange sphere was the perfect bite after the crab curry, and the cosmic plating is so cool!


Del hielo pasamos al fuego, que ahora decora nuestra mesa, y nos hace entrar en calor, porque ese día en Chicago hacía un viento helado!

 We go from ice to fire, now decorating our table, and keeping us warm. It was quite a cold and windy day in Chicago!


Tinta: Un bocado de calamar cubierto de pétalos de caléndula con un toque de ajo negro, meloso y sabroso.
Ink: A squid piece covered in calendula with some black garlic, smooth and tasty.


Negro: Lo acompañan de una bandeja de rocas, entre las que tienes que encontrar la que te puedes comer. Fue uno de los bocados más sorprendentes de la noche, una esfera intensa, de crema de alcachofa con aceite de oliva!

Black: In a tray full of black rocks you have to find the edible one. It was one of the most amazing bites of the night, an intense artichoke cream sphere with olive oil!


Mientras tanto... algo se cocinaba en nuestra pequeña brasa...
Meanwhile... something was cooking under our little fire...


Pero todavía le queda un rato! Cuando el fuego se va extinguiendo lo cubren con un ramo húmedo de lavanda, que va ahumando lentamente la mesa y perfumándola con aires de la Provenza.

But we still have to wait for that! When the flames were extinguished they covered it with a wet lavender bunch, which smoked the air around the table with perfumes from the Provence.


Crujiente: Un rollito de alga nori relleno de sabrosa rouille.

Crunch: A nori seaweed roll filled with tasty rouille.


Papel: Esta delicada hoja se funde con el líquido de la tetera y da como resultado una sopa bullabesa que, a pesar de su etérea apariencia, tenía toda la potencia de sabor.

Paper: This fragile sheet disolver in the soup, turning into a wonderful and rich bouillabaisse. The ethereal appearance has nothing to do with its intensity.


Perfume: me encantó este bocado, un dumpling de vieira con salsa XO ahumado con lavanda. Ya sabéis que soy muy fan de los ahumados, y este se queda en mis lista de favoritos!

Perfume: I loved this scallop dumpling, with XO sauce and lavender smoked. You know how much I love smoked food, and this is gonna stay in my favourites list.


Nos traen la mise en place a la mesa para preparar lo que se cocinaba en nuestro centro de mesa; una patata!

The mise en place comes to the table to finish what was cooking under our little fire; a potato!


El Cabo: La patata la machacan con la salsa y hierbas para preparar una versión de clam chowder con sabor a almejas y bacon, terminado con una espuma tirada con sifón. Para mojar pan! Una pena que el pan aquí no se ve ni en foto...

The Cape: They smash the potato with a cream and herbs to make a version of a clam chowder, with bacon notes, finished with foam. Perfect to dip some bread! Sadly bread is nowhere to be seen...


La Vieja Bahía: Aunque aquí no se lleva mucho el pan, lo que si hay son crackers, sobre todo para acompañar a las ostras... cosa que yo aun no acabo de entender, pero yo os contaré en otro capítulo las curiosidades gastronómicas de este país! Vamos al grano, un cracker de ostra, sin más. Donde esté  una regañá... 

Old Bay: Bread is not a must in this country, but crackers are always there, specially around oysters... something I don't really get, but American gastronomy issues deserve another post! Let's focus, an oyster cracker, that's basically it. I wish they had "regañás"...


Pasamos a la parte más emocionante de la cena, nos dicen que nos levantemos para tomar el siguiente bocado en otro sitio, la cocina!

But let's move to the most exciting part of our dinner, they tell us to stand up cause we are having the next dish somewhere else, in the kitchen!


Allí nos enseñan un extraño artilugio para agitar las cocteleras de 4 en 4. La maquineta las zarandea arriba y abajo mientras nos explican el cóctel. No me preguntéis porque no me enteré de nada, estaba alucinando observando todo lo que pasaba en la cocina, incluyendo a Simon Davies usando con sus globos!

There they show us a unique machine to shake 4 cocktails at a time. The machine shakes them up and down while they explain the cocktail. Don't ask me about it cause I didn't hear a word, was too busy being amazed by everything happening in the kitchen, including Simon Davies creating his balloons!



Todo riquísimo, eso sí!

But, of course, it was wonderful!


Y allí estaba Grant Achatz, emplatándonos la siguiente ronda! En nuestras visitas a otros restaurantes con grandes chefs nos han recibido o nos han despedido muy atentos, algunos incluso nos han enseñado su cocina con mucho cariño, pero creo que esta es la primera vez que tenemos el placer de ver al chef en acción en su cocina, así que lo dejamos que siga trabajando!

And there he was, Grant Achatz, plating the next round for us! We have visited other restaurants where great chefs have welcomed us or wished us a good nite, some of them have lovingly showed us their kitchens, but I think this is the first time we see the chef cooking in his kitchen, so let's let him do his magic!


Vibrante: Un plato inspirado en la primavera, con colmenillas cubiertas por una crema de puerros salvajes y parmesano. Cremoso y muy muy sabroso. Me habría llevado un tupper para el día siguiente!

Vibrant: A dish inspired by Spring, with morels covered with parmesan and ramp cream. Tender and flavourful. I would have taken the leftovers for the day after, but there was nothing left!


Llegamos al final de esta parte con algo de carne, un curioso bote de vainilla y otro platillo. 
And we come to the end of this part with some meat, a curious vanilla jar and some other small dish.


Carbón: yo sigo creyendo que los de Michelin te dan más puntos por meter pichón en el menú... Nos lo traen con un ascua de carbón binchotan que le da un buen toque.
Coal: I'm sure Michelin gives extra points for including squab in the menu... They cook it with Binchotan coal, which gives a nice touch.


Vaina: me encantan los trampantojos! Este bote parecía de vainas de vainilla, pero en realidad tenía un par de tiras de solomillo curada en vainilla. La vista y el olfato te decían que era vainilla, pero al masticarlo estabas comiendo ternera!

Bean: I love this kind of tricks! The jar seemed to hold vanilla beans, but it was actually beef tenderloin, cured in vanilla and more spice. The sight and smell told us it was vanilla, but we knew it was beef when we chewed it!


Espiral: Una espiral de remolacha encurtida con una gota de salsa de mostaza. Se lo podían haber ahorrado.
Spiral: A marinated beet spiral with Chinese mustard. They could have saved it.


Aire: Una nube de queso de cabra al aroma de la miel de manuka. Miel con queso... sabe a beso, así de simple.

Air: a goat cheese cloud with Manuka honey. Honey and cheese... taste like a kiss, that simple.

Chupito: Os acordáis de esos tubitos de plástico rellenos de gelatina roja que mordías y sacabas la gelatina del tubo? Pues este estaba mejor, porque era de piña, aloe y shiso, pero el interior estaba líquido. Lo complicado era llegar hasta el interior porque el tubo era de cristal, así que había que succionar hasta casi quedarse sin mofletes.

Shot: Do you remember those jelly plastic tubes? This tastes much better cause it's pineapple, aloe, and shiso, but the inside is more liquid and tricky to eat.


Bodegón: está versión elegante del banana split me conquistó. Una mini banana de vainilla rellena con una crema de chocolate y acompañada de un destilado de cereza maraschino. Maravilloso.

Still Life: this smart banana split won my heart. A mini vanilla banana with a chocolate heart, served with maraschino cherry distillation. Wonderful.


Globo: el truco final llega con un plato que flota en el aire. Un globo de manzana verde lleno de helio,  super divertido de comer! Te lo pones a la altura de la cabeza, te acercas para darle un beso y empiezas a succionar, terminando la cena con el frescor de la manzana y la voz de pito. Risas aseguradas!

Balloon: the final trick comes with a dish that floats in the air. A green apple balloon filled with helium, amazing to eat! You hold it in front of your face, come closer to kiss it and start sucking, ending your dinner with the apple freshness, the funny voice and a lot of fun!
